These Skinny Mint ChocolateBrownies are a cake-likebrownie-super easy to make-with only 4 ingredients! These will curb any sweet tooth! Serve them with a bowl of light ice cream or top with some whip cream for an easy and delicious dessert!

How do I make these Skinny Mint Brownies?

For these brownies I like to use thesugar free devil’s food cake mix as the base instead of the sugar free brownie mix.

I recommend using a 9 x 9 baking dish. If you like your brownies thinner you will want to use 9 x 13 baking dish.

My kids prefer thick-cake like so I use a 9 x 9 dish that makes them thicker and more cake like.

I like to sprinkle my brownies withSwerve Sweetener, Confectioners, which is a powder sugar alternative.

Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Spray a 9×9 baking dish with non stick cooking spray. (You can use a 9 x 13 dish the brownie will be thinner and not as thick if you do.)
  3. In a large mixing bowl combine, dry cake mix, eggs, unsweetened applesauce, water and extract.
  4. Stir until fully combined.
  5. Spread brownie batter into prepared pan.
  6. Bake for 25-30 minutes.

Note:

  1. You can omit the mint extract all together to make plain chocolate brownies.
  2. Be aware the peppermint extract can be pretty potent soyou’ll not want to add any more than a 1/4 teaspoon.
