Admittedly, protein treats can be a little dry and tasteless, but this protein brownie recipe completely flips the script! It’s moist, dense, and chocolatey, and it comes in a single-serve serving so you don’t need to worry about going overboard.

Brownies are one of my favorite treats, but with their high-calorie content and low nutrient density, I tend to eat them only on special occasions. This led me to create a protein brownie that minimcks the taste and texture of the real thing but contains fewer calories and a lot more protein. With 33g of protein per serving, this Cottage Cheese Brownie packs a powerful punch of satisfaction and enjoyment.

Ingredients

  • 1/4 cup Low-fat cottage cheese I used Good Culture
  • 1 scoop Chocolate protein powder I used Clean Simple Eats, code TAMI saves you
  • 2 tbsp Unsweetened cocoa powder
  • 1 tbsp Oat flour
  • 1/4 tsp Baking powder
  • 2 tbsp Sugar-free maple syrup
  • 1/4 tsp Vanilla extract

Instructions

  • In a microwave-safe mug or bowl, combine the cottage cheese and protein powder. Stir until they are well combined.

  • Add the unsweetened cocoa powder, almond flour (or oat flour), baking powder, sweetener, vanilla extract, and a pinch of salt to the mixture. Stir everything together until you have a smooth batter. If the batter is too thick, you can add a tablespoon of water or milk of your choice to reach your desired consistency.

  • If you'd like, you can fold in any optional add-ins like dark chocolate chips, chopped nuts, or dried fruits for extra flavor.

  • Microwave the mug or bowl on high for about 1 minute and 30 seconds to 2 minutes, or until the brownie has risen and set. Cooking time may vary depending on your microwave's wattage, so keep an eye on it to avoid overcooking.

    Carefully remove the brownie from the microwave (it will be hot), let it cool for a minute, and then enjoy your single-serve protein brownie!

    • Hi Melissa! I don’t blend it, but if the curds (texture) bothers you, you can absolutely blend first! Once you warm it up, it melts anyway 🙂

  • Any subs that you think would work in place of the oat flour and sugar free maple syrup?

    • Hi Nickie! For the oat flour, you can try any other type of flour, you just may have to adjust measurements a bit. For the sugar-free maple syrup, you can use regular maple syrup, honey, or any other kind of liquid sweetener you can find. Hope this helps!

  • I prefer not to use the microwave. How would you bake this in
    the oven?

    • I would do 350 degrees for 20-25 minutes, or until its cooked through. I haven’t tried it that way, so you may need to do some experimenting!
