These Weight Watchers Lemon Muffins recipes have been my family’s favorite for years! I have been on WW since 2010, Weight Watchers. Now I love that the program is food that my whole family will eat and is everyday food I choose.

I am sure you know if you have been doing Weight Watchers that there are times you make something that your family doesn’t like but that you do. Luckily these are not that way, and the kids even love these muffins when we make them. I found this originally in a Weight Watcher support Facebook group.

What Is Weight Watchers?

When starting a new weight loss program or diet change, consult a doctor or physician about personal health concerns. It is a good idea to have blood sugar levels, blood pressure, and hormones checked at a physical before and during being on the WW program.

New to Weight Watchers?? Also known as WW, a weight loss program uses points assigned to food to track and lose weight. When you sign up, you take an assessment that will assign you a point value to eat daily and a weekly allowance. You can carry over 4 points from the day into your weekly budget, which is handy when you need more points.

I have been on Weight Watchers since 2011. They have had Points Plus Value, WW Smartpoints, Blue Plan, Green Plan, Purple Plan, WW Personal Points, and now Weight Watchers Points. The new Weight Watchers Simplified plan is the new program launched in November 2022, similar to previous plans like WW Smartpoints, with some color plans. No matter the WW plan, it works to help you learn healthy eating habits. I have hit my lifetime goal weight several times but stopped following the plan and tracking, so the weight does creep back on.

Weight Watchers Lemon Muffins Recipe Ingredients:

  • Water
  • Lemon Greek Yogurt– This has become hard to find, but you can use a no-fat Greek yogurt or low-calorie Greek yogurt. The no fat will have points on the current plan.
  • Lemon cake mix You can do a different flavor if you can find a lemon Greek yogurt; if not, lemon flavoring may make up for not having a lemon cake mix.

How To Make Lemon Weight Watchers Muffins:

Preheat your oven to 350 degrees

Take a paper towel and wet it with vegetable oil

Rub theMuffin Panwith the paper towel to grease the pan so that your muffins will pop out

In a bowl, mix all three ingredients until well mixed; it’s a weird light, fluffy dough and smells amazing.

Using a cookie scoop, spoon the dough into the muffin pan until all 24 are full; these do rise a bit, so don’t fill up all the way

Set in the oven and bake for about 15-22 minutes depending on how hot your oven cooks

Remove from oven when you can remove a clean toothpick and allow to cool for 10 minutes

I remove my muffins by popping up from the bottom; they typically pop out clean!

Place the muffins on a baking rack to help cool off before you bag them up! These do tend to hold the heat, so be sure to cool them properly! I have about ten different wire racks; when I go on a baking frenzy, it’s really handy to have a lot of them! I use mine at least once a week!

Regrease your pan and bake the rest of the batter. I get from 32-40 muffins depending on how full the cups of the muffin pan are before baking

Pop them out and enjoy!

Now with any Weight Watcher recipe, be sure to replug your ingredients on the recipe for proper point calculation and tracking. I have included screenshots from the recipe builder on WW when I had 37 muffins in a batch. Mine worked out to two weight watchers points per mini muffin.

How To store lemon yogurt muffins

Store in an air-tight bag on the counter for up to five days. You can freeze these in an air-tight container for up to 90 days.

Storing leftovers properly requires the right tools! My preferred storage method is if the leftovers can be sealed in afood saver. If not, then anair-tight containeror Ziploc bag for the fridge is the way I go. The air-tight container and afreezer Ziploc bagare the next best bet for freezing the leftovers. I also use afood scaleto measure portions into serving sizes.
